The first step to filleting a fluke properly is to have a good cutting board with a top of the line beer holder. There are a number of ways to fillet a fluke but the one I prefer, in order to get the entire fillet in one piece, is to make the first cut just below the gills from one side to the other. This allows you to easily slide the knife down the backbone as seen in the next step.
